2. To freeze it, let enchiladas to cool completely. Now transfer to an airtight container.

Recipe for Chicken Enchiladas

Ingredients to make Chicken Enchiladas

Tortillas (8- flour or corn)

Sauce

Tomato Passata (1.5 cups)
Chicken Stock (2 cups)
All-purpose Flour (3 tablespoons)
Olive Oil (2 tablespoons)

Seasoning

Cayenne Pepper (3/4 teaspoon)
Black Pepper (1/4 teaspoon)
Dried Oregano (1 tablespoon)
Paprika (1 tablespoon)
Dried Cumin Powder (1 tablespoon)
Onion Powder (1 teaspoon )
Garlic Powder (1 teaspoon)
Salt (1 teaspoon )

Filling

Cheese (100grams)
Chicken Breast (600 grams)
Onion (1/2- chopped)
Olive Oil (2 tablespoons)
Red Capsicum (1- diced)
Garlic Cloves (2- finely minced)
Canned Corn (400 grams)
Beans (400 grams)
Water (1/4 cup)

Topping

Cilantro (2 tablespoons)
Cheese (150 grams)

How to make Chicken Enchiladas

Instructions to make Chicken Enchiladas

Seasoning

1. Combine all enchiladas seasoning spices for filling and sauce.

Sauce

1. To make enchiladas sauce, heat oil in a pan over medium heat.
2. Now add flour and stir.
3. After this, add 2 tablespoons enchiladas seasoning, tomato and broth and mix it well.
4. Now increase heat slightly to medium and cook it for 5 minutes.
5. Whisking regularly, until the sauce thickens to the consistency of thick syrup.
6. Now remove it from gas.

Filling

1. For filling, drizzle 1 tablespoon oil over chicken, mix to coat and sprinkle with seasoning and toss to coat.
2. Now, take a large pan and heat 1 tablespoon oil over high heat.
3. After this, add chicken and cook for 2 minutes. Turn and cook for 2 minutes.
4. Now remove from gas and rest 2 minutes then chop it.
5. In the same pan, add garlic and onion and cook for 1 minute.
6. Now add capsicum and cook for 2 minutes until onion is light brown.
7. Now, add diced chicken, beans, corn and water and cook for 2 minutes.
8. It should be thick and juicy.

Bake

1. Preheat oven 350°F.
2. Now lay tortilla on work surface.
3. After this, spread 2/3 cup filling on lower third, sprinkle with cheese then roll up, finishing with the seam side down.
4. Repeat to make 8.
5. Now smear a scoop of sauce across base pan.
6. After this, place enchiladas in and pour over remaining sauce and sprinkle with cheese.
7. Now bake it for 20-25 minutes or until cheese is melted and golden.
8. Sprinkle with coriander and serve.
