This dish is a classic and authentic cooking from Argentina, South America which is filled with dulce de leche and rolled in coconut. Chocolate and coconut are the popular flavours of Alfajores. The cookie is tender and extremely soft. Most people likes coconut flavour in it because it cuts some of the sweetness and gives very delightful taste. For filling cookies, we use dulce de leche which you can make at home by yourself or you can buy it from market.

Tips for making Alfajores

1. While making dough for this dish sometimes you feel that the dough getting dry, for this, you can add little bit of milk and water to make it soft.

2. Mix the dough until the all ingredients are combined well.

3. Do not mix it for a long time, otherwise the cookies can turn out tough from producing too much gluten.

Ingredients to make Alfajores

All-purpose Flour (2 cup)
Egg (1)
Corn starch (1 cup)
Powdered Sugar (2/3 cup)
Baking Powder (1 teaspoon)
Unsalted Butter (3/4 cup)
Dulce de leche (1 cup)
Vanilla Extract (one and half teaspoon)
Lemon Zest (1 teaspoon)
Salt (1/4 teaspoon)

How to make Alfajores

Instructions to make Alfajores

1. To make this dish, take a bowl and combine the all-purpose flour, baking powder, cornstarch, powdered sugar and salt together.
2. Now take a large add butter and beat it with a hand mixer until light and fluffy.
3. After this, add egg, lemon zest and vanilla extract and mix it well.
4. Now add the dry ingredients to the wet and mix it well.
5. Make sure to scrape down the bowl to make sure everything is completely mixed in.
6.  Make a dough by combining all the ingredients and wrap tightly with plastic wrap. Keep it to the refrigerator and chill for 35-40 minutes.
7. Now preheat the oven to 375° and line a baking sheet with parchment paper.
8. After this, take out the dough from the fridge and let it sit at room temperature for about 5 minutes.
9. Now cut out cookies by using a round or scalloped-edged cookie cutter.

10. After cutting the cookies, chill it in the refrigerator for about 10 minutes before baking it.
11. Now bake the cookies for about 8 minutes,just until the edges starts to turn golden.
12. You don’t have the whole cookie to be golden, just the very edge.
13. Now transfer cookies to a cooling rack and let it cool completely.
14. Now fill the piping bag with dulce de leche and pipe about 1-2 teaspoon in the middle of one cookie.
15. After this, sandwich a second cookie onto the first.
16. Now keep it in fridge until it’s ready to serve.
